What will be the big food trend coming out of this year's Classic?
One thing I've seen a lot of in drinking is fruit. Fruit is a really big word. A big word! But fruit has gone well beyond the Alize or that passion fruit crap that was big years ago. People are doing really creative infusions with herbs and fruit.
And a culinary trend?
The cuisine of the south is BIG. Pickles and pork, you can't beat it. When people try it they get it. This Southern thing is going well beyond fried chicken. Think pickled watermelons.
